Banana Mandarin Meringue Pie

“This is a twist on an old favorite. You can also use oranges or any other citrus fruit you have on hand.”

Serves 8

1 6-oz prepared graham cracker pie crust
1 8-oz package cream cheese, softened
1 can sweetened condensed milk
1/3 cup fresh squeezed lemon juice
1 tsp vanilla extract
3 medium bananas, divided
15 oz mandarin orange segments, divided

For the Meringue:
3 egg whites
2 oz caster sugar

In a large bowl, beat cream cheese until fluffy. Gradually beat in milk until smooth. Stir in lemon juice and vanilla. Slice 2 bananas and dip in lemon juice; drain. Line bottom of crust with bananas and 2/3 of the orange segments. Pour filling over fruit. Chill until set, about 3 hours.
