Autumn Baked Squash

Serves 12


3 acorn squash
6 tbsp brown sugar
3 tbsp butter
1 tbsp grated orange peel
3 medium oranges


Wash squash, cut in half, and remove seeds. Place cut side down in shallow baking pan. Bake in 375 F oven for 40 minutes. Turn cut side up and fill each cavity with 1 tbsp. brown sugar, 1/2 tbsp. butter, 1/2 tsp grated peel, and several orange sections. Add water to baking pan, if necessary. Continue baking until tender. Baste occasionally as butter melts and juice forms.
